Cottage Cheese Cookie Dough

Ingredients
  

  • ½ cup cottage cheese 2% or full-fat for creaminess
  • 2 tablespoons almond butter or peanut butter
  • 1–2 tablespoons maple syrup adjust to taste
  • ½ teaspoon vanilla extract
  • ¼ cup oat flour or almond flour for lower carbs
  • pinch of sea salt
  • 2 tablespoons chocolate chips or chopped dark chocolate

Instructions
 

  • In a small blender or food processor, combine cottage cheese, almond butter, maple syrup, and vanilla. Blend until completely smooth and creamy.
  • Pour the mixture into a bowl. Fold in oat flour and a pinch of sea salt until a dough forms.
  • Stir in chocolate chips or other mix-ins like sprinkles, chopped nuts, or a swirl of Nutella.
  • Enjoy immediately, or chill in the fridge for 15–20 minutes for a firmer cookie dough texture.

Notes

For thicker dough, add an extra tablespoon of oat flour. To make it sugar-free, use stevia or monk fruit instead of maple syrup. For a dairy-free version, use plant-based cottage cheese or blended silken tofu. Can be portioned into bites and frozen for a grab-and-go snack.
