- In a small blender or food processor, combine cottage cheese, almond butter, maple syrup, and vanilla. Blend until completely smooth and creamy.
- Pour the mixture into a bowl. Fold in oat flour and a pinch of sea salt until a dough forms.
- Stir in chocolate chips or other mix-ins like sprinkles, chopped nuts, or a swirl of Nutella.
- Enjoy immediately, or chill in the fridge for 15–20 minutes for a firmer cookie dough texture.
Notes
For thicker dough, add an extra tablespoon of oat flour. To make it sugar-free, use stevia or monk fruit instead of maple syrup. For a dairy-free version, use plant-based cottage cheese or blended silken tofu. Can be portioned into bites and frozen for a grab-and-go snack.
