Banana Bark

This frozen banana bark recipe is a quick, healthy, and sweet treat made with just five pantry staples. Creamy, crunchy, and chocolatey—perfect as a snack or dessert!

Ingredients
  

  • 2 ripe bananas sliced into coins
  • ¼ cup peanut butter natural or your favorite brand
  • ½ cup chocolate chips dark, semi-sweet, or your preference
  • 1 teaspoon coconut oil optional, helps with spreading
  • 1 pinch flaky sea salt optional but highly recommended

Method
 

  1. Line a baking tray with parchment paper. Arrange banana slices in a tight rectangle without gaps.
  2. Gently spread peanut butter over the banana slices. Microwave it for 10–15 seconds if needed for easier spreading.
  3. Place the tray in the freezer for 20 minutes to allow the peanut butter to firm up.
  4. Melt chocolate chips and coconut oil in the microwave in 30-second bursts, stirring each time until smooth.
  5. Pour the melted chocolate over the peanut butter layer and spread evenly.
  6. Sprinkle flaky sea salt on top (if using), then return the tray to the freezer for another 20 minutes or until fully set.
  7. Break or slice into bark-like pieces and store in an airtight container in the freezer.

Notes

Optional add-ons include crushed nuts, shredded coconut, mini marshmallows for a rocky road twist, or chia/hemp seeds for added nutrition. Store in the freezer for up to a month, though it’s usually gone long before that!
