Ingredients
1 lb ground carp
1 lb ground whitefish
1 large onion, grated
2 large eggs
1/3 cup matzo meal
1 1/2 tsp salt
1/2 tsp ground white pepper
1 tbsp sugar (optional, for sweeter variation)
Fish stock or water, for poaching
Instructions

In a large bowl, mix the ground carp and whitefish until well combined.

Add grated onion, eggs, matzo meal, salt, pepper, and sugar (if using). Mix thoroughly to form a uniform mixture.

Shape the mixture into oval patties or balls.

Bring a pot of fish stock or water to a gentle simmer.

Carefully place the fish patties into the pot and poach for 1–1.5 hours, uncovered.

Remove from the liquid and let cool. Serve chilled or at room temperature, often with horseradish.
Notes
For a more savory version, omit the sugar and increase pepper or add fresh dill.
Some versions include carrots or other aromatics in the poaching liquid for added flavor.
