Ingredients

2–3 lbs soup bones (e.g., marrow bones, knuckle bones, oxtail, neck bones)

2 carrots, roughly chopped

2 celery stalks, roughly chopped

1 onion, quartered

2–3 garlic cloves, smashed

1 tbsp apple cider vinegar (optional, for mineral extraction)

1–2 bay leaves

6–8 cups water (enough to cover the bones)

Salt, to taste


Instructions

  • Roast the Bones (Optional but Recommended): Preheat the oven to 400°F (200°C). Spread bones on a baking tray and roast for 30–40 minutes until browned.

  • Transfer to Pot: Place roasted bones in a large stockpot or slow cooker. Add carrots, celery, onion, garlic, and bay leaves.

  • Add Water and Vinegar: Pour in water until everything is just covered. Add apple cider vinegar to help draw out minerals.

  • Simmer Slowly: Bring to a gentle boil, then reduce heat and simmer uncovered for 12–24 hours. For a slow cooker, use low heat.

  • Strain and Store: Strain the broth through a fine mesh sieve. Cool and store in the fridge for up to 5 days or freeze for later use.
