  • 1 cup all-purpose flour
  • ½ cup powdered sugar
  • ½ cup unsalted butter, softened

For the Filling:

  • 1 cup sourdough starter (discard or active)

  • 1 cup granulated sugar

  • 2 large eggs

  • ½ cup fresh lemon juice

  • Zest of 2 lemons

  • ¼ cup all-purpose flour

  • Powdered sugar (for dusting)


Instructions

  • Preheat the oven to 350°F (175°C).
  • Prepare the crust: In a bowl, mix flour and powdered sugar. Cut in the butter until the mixture becomes crumbly.
  • Bake the crust: Press the crust mixture into a baking dish and bake for 15-20 minutes until lightly golden.
  • Make the filling: In another bowl, whisk together sourdough starter, sugar, eggs, lemon juice, and lemon zest until well combined.
  • Incorporate flour: Stir in the ¼ cup flour until smooth.
  • Bake the bars: Pour the filling over the baked crust and return to the oven. Bake for an additional 20-25 minutes or until the filling is set.
  • Cool and serve: Let the bars cool completely before dusting with powdered sugar and slicing into squares.

  • You can use sourdough discard for this recipe—no need for an active starter.
