Instructions
- Preheat the oven to 350°F (175°C).
- Prepare the crust: In a bowl, mix flour and powdered sugar. Cut in the butter until the mixture becomes crumbly.
- Bake the crust: Press the crust mixture into a baking dish and bake for 15-20 minutes until lightly golden.
- Make the filling: In another bowl, whisk together sourdough starter, sugar, eggs, lemon juice, and lemon zest until well combined.
- Incorporate flour: Stir in the ¼ cup flour until smooth.
- Bake the bars: Pour the filling over the baked crust and return to the oven. Bake for an additional 20-25 minutes or until the filling is set.
- Cool and serve: Let the bars cool completely before dusting with powdered sugar and slicing into squares.

- You can use sourdough discard for this recipe—no need for an active starter.
