Description

This banana bread is more than just a way to use up overripe bananas—it’s a gentle reminder to slow down and savor the simple things. Made with basic pantry staples and no fancy equipment, this moist and flavorful loaf comes together quickly and delivers all the comfort of home in every slice.


Ingredients

3 large overripe bananas, mashed

½ cup unsalted butter, melted

¾ cup granulated sugar

2 large eggs

1 teaspoon vanilla extract

1 ½ cups all-purpose flour

1 teaspoon baking soda

½ teaspoon salt

Optional: ½ teaspoon cinnamon

Optional: ½ cup chopped walnuts or chocolate chips


Instructions

  • Preheat your oven to 350°F (175°C). Grease a standard 9×5-inch loaf pan or line with parchment paper.

  • In a large bowl, mash the bananas until mostly smooth.

  • Stir in the melted butter and sugar until combined.

  • Add the eggs and vanilla extract, mixing well.

  • In a separate bowl, whisk together the flour, baking soda, salt, and cinnamon (if using).

  • Gently fold the dry ingredients into the wet mixture until just combined—do not overmix.

  • If using, fold in chopped nuts or chocolate chips.

  • Pour the batter into the prepared pan and smooth the top.

  • Bake for 55–65 minutes, or until a toothpick inserted in the center comes out clean or with just a few moist crumbs.

Notes

For extra moisture, add ¼ cup sour cream or Greek yogurt to the wet ingredients.

To ripen bananas quickly, bake unpeeled bananas in a 300°F oven for 15–20 minutes until blackened and soft.
