Ingredients
1 cup shredded mozzarella cheese (low moisture recommended)
About 50 mini pepperoni slices (or as needed)
2 tablespoons Italian seasoning
Optional: marinara sauce, ranch, or creamy dressing for dipping
Instructions

Preheat the oven to 350°F (175°C). Lightly grease a mini muffin pan.

Place 2 to 2½ tablespoons of shredded mozzarella into each muffin cup.

Top each with 3–4 mini pepperoni slices and a pinch of Italian seasoning.

Bake for 7–8 minutes, or until the cheese is bubbly and golden around the edges.

Let cool for about 5 minutes, then gently pop them out and serve warm.
Notes
You can substitute mozzarella with cheddar, provolone, or a bit of Parmesan for added crunch and flavor.
Use whatever leftover cheese you have in the fridge. Dipping in marinara or ranch takes it to the next level!
