1 tablespoon olive oil

½ cup onion, finely chopped

3 garlic cloves, minced

1 tablespoon butter

1 pound chicken breast, diced

½ teaspoon Italian seasoning

½ teaspoon garlic powder

½ teaspoon red pepper flakes

Salt and pepper to taste

1 cup heavy cream

½ cup freshly grated Parmesan

½ cup sun-dried tomatoes, chopped

Fresh basil, for garnish


Instructions

  • Boil Pasta: Bring a large pot of salted water to a boil. Cook pasta until al dente. Reserve ½ cup of pasta water, then drain and set aside.

  • Sauté Aromatics: Heat olive oil in a large skillet over medium heat. Add chopped onion and sauté for 2–3 minutes. Stir in garlic and butter; cook until fragrant.

  • Cook Chicken: Add diced chicken to the pan along with Italian seasoning, garlic powder, red pepper flakes, salt, and pepper. Sauté until the chicken is cooked through and golden brown, about 5–6 minutes.

  • Create Sauce: Pour in heavy cream and reserved pasta water. Stir in Parmesan and sun-dried tomatoes. Simmer on low heat for 3–5 minutes, or until the sauce slightly thickens.

  • Combine Pasta: Add cooked pasta to the skillet and toss to coat in the sauce. Simmer for another minute to allow flavors to meld.

  • Garnish and Serve: Top with fresh basil and extra Parmesan if desired. Serve warm.

Notes

Swap chicken breast for thighs or rotisserie chicken to save time.

For a lighter version, use half-and-half, evaporated milk, or Greek yogurt.
