Description
The knob sandwich is your last-minute kitchen hero—a fast, flexible, flavor-packed sandwich built from whatever you’ve got on hand. With crunchy bread, a hearty filling, and layers of texture and taste, it’s the ultimate 5-minute meal for busy families or solo snackers.
Ingredients
1 sturdy sandwich roll (ciabatta, sourdough, or rustic bread)
1/2 cup shredded cooked chicken (or other cooked protein)
1/4 cup fresh spinach (or any leafy greens)
1 tablespoon herbed mayonnaise (or preferred spread)
1 slice cheese (optional)
Salt and pepper, to taste
Butter or olive oil (for toasting, optional)
Instructions
-
Slice the bread in half and lightly toast it, either in a toaster or on a skillet, until just golden and crisp.
-
Spread the herbed mayo on the bottom slice of the bread.
-
Layer on the shredded chicken, spinach, and cheese (if using).
-
Add a pinch of salt and pepper to taste.
-
Close the sandwich with the top slice of bread.
-
If desired, grill the whole sandwich in a panini press or skillet for 2–3 minutes per side until the bread is crispy and the filling is warmed through.
-
Slice in half and serve immediately.
Notes
Swap proteins easily: use ham, turkey, tofu, or chickpea salad.
Add extras like pickles, caramelized onions, or avocado for bonus flavor.
For kids, make mini versions using smaller rolls or buns.
Great as a cold sandwich if you skip the toasting step.
