Ingredients
Tomato Soup 🍅
- 2 tbsp butter 🧈
- 1 small onion, chopped 🧅
- 2 cloves garlic, minced 🧄
- 1 can (28 oz) crushed tomatoes 🍅
- 2 cups vegetable or chicken broth 🍲
- 1 tsp sugar 🥄
- ½ tsp salt 🧂
- ½ tsp black pepper 🌿
- ½ cup heavy cream or milk 🥛
- 1 tsp dried basil (optional) 🌿
Grilled Cheese Sandwiches 🥪
- 8 slices of bread 🍞
- 4 tbsp butter, softened 🧈
- 2 cups shredded cheddar cheese (or sliced cheese of choice) 🧀
- ½ tsp garlic powder (optional) 🧄
Instructions
For the Tomato Soup:
1️⃣ In a large pot, melt butter over medium heat. Add chopped onion and cook until soft, about 5 minutes.
2️⃣ Stir in garlic and cook for another minute until fragrant.
3️⃣ Pour in crushed tomatoes and broth. Add sugar, salt, and black pepper. Bring to a simmer and cook for 15-20 minutes.
4️⃣ Blend the soup with an immersion blender (or in batches using a regular blender) until smooth.
5️⃣ Stir in heavy cream or milk and dried basil. Simmer for 5 more minutes. Adjust seasoning if needed.
For the Grilled Cheese:
1️⃣ Butter one side of each bread slice. If desired, sprinkle garlic powder on the buttered side for extra flavor.
2️⃣ Place cheese between two slices, buttered sides facing out.
3️⃣ Heat a skillet over medium-low heat. Cook each sandwich for 3-4 minutes per side until golden brown and cheese is melted.
