2 boneless, skinless chicken breasts

2 tablespoons olive oil

4 cloves garlic, minced

1½ cups heavy cream

1 cup freshly grated Parmesan cheese

1 teaspoon Italian seasoning (optional)

1/4 teaspoon red pepper flakes (optional)

12 oz pasta (fettuccine, penne, or preferred type)

Fresh parsley, chopped (for garnish)

Optional: 1 cup sliced mushrooms


Instructions

  • Prepare the Chicken:
    Season both sides of the chicken breasts with salt and pepper.
    Heat olive oil in a large skillet over medium-high heat. Add chicken and cook for 6–7 minutes per side, or until golden brown and cooked through. Remove, let rest for a few minutes, then slice into strips.

  • Make the Sauce:
    In the same skillet, reduce heat to medium. Add butter and let it melt.
    Add minced garlic and sauté for 1–2 minutes until fragrant.
    Pour in heavy cream, stirring to combine. Gradually whisk in the Parmesan cheese until melted and smooth.
    Stir in Italian seasoning and red pepper flakes (if using). Adjust salt and pepper to taste.

  • Cook the Pasta:
    Bring a large pot of salted water to a boil. Cook pasta according to package instructions until al dente. Drain and set aside.

  • Combine and Serve:
    Add cooked pasta to the sauce, tossing to coat evenly. Add sliced chicken and gently stir to combine.
    Garnish with chopped fresh parsley and additional Parmesan cheese before serving.

Notes

For added flavor, sauté mushrooms in butter before adding the garlic.

You can substitute half-and-half for heavy cream for a lighter version, though the sauce may be thinner.
