Instructions

  • Pat the deer steaks dry with a paper towel.

  • Season both sides generously with salt, pepper, and garlic powder. Optionally, marinate with olive oil, balsamic vinegar, and rosemary for 30 minutes.

  • Heat a cast-iron skillet over medium-high heat and add olive oil.

  • Rest the steaks on a plate, loosely covered, for 5–10 minutes before slicing against the grain.

Notes

For even more tenderness, try sous vide cooking at 130°F (54°C) for 1–2 hours, then sear.

If desired, soak steaks in buttermilk or saltwater before cooking to mellow the gamey flavor.

Best paired with roasted vegetables, mashed potatoes, and a red wine reduction.
