Description

These perfect gluten free cupcakes are soft, moist, and bursting with flavor—everything you’d expect from a traditional cupcake, without the gluten. With the right flour blend, added moisture, and expertly balanced sweetness, these cupcakes are ideal for birthdays, special occasions, or everyday treats.


Ingredients

1 ½ cups certified gluten-free all-purpose flour blend (with xanthan gum)

1 tsp baking powder

½ tsp baking soda

¼ tsp salt

½ cup unsalted butter or dairy-free substitute, softened

¾ cup granulated sugar or coconut sugar

2 large eggs (or flax eggs for vegan option)

1 tsp pure vanilla extract

½ cup plain yogurt or dairy-free yogurt (e.g., coconut or almond)

¼ cup milk or dairy-free milk (e.g., almond, oat, or soy)

1 tbsp lemon juice or apple cider vinegar (for tenderness)


Instructions

  • Preheat your oven to 350°F (175°C). Line a muffin tin with cupcake liners.

  • In a medium bowl, whisk together the gluten-free flour, baking powder, baking soda, and salt. Set aside.

  • In a large bowl, cream the butter and sugar together until light and fluffy.

  • Add eggs one at a time (or flax eggs), mixing well after each addition. Stir in the vanilla extract.

  • Mix the yogurt, milk, and lemon juice in a small bowl.

  • Alternately add the dry ingredients and the yogurt mixture to the butter mixture, beginning and ending with the dry ingredients. Mix gently until just combined. Do not overmix.

  • Fill cupcake liners about 2/3 full with batter.

  • Bake for 18–22 minutes, or until a toothpick inserted into the center comes out clean.

  • Let cupcakes cool in the tin for 5 minutes, then transfer to a wire rack to cool completely before frosting.

Notes

For added moisture, mix in 2 tbsp of applesauce.

Add 1 tbsp cocoa powder for a chocolate version.

Use dairy-free butter and yogurt for vegan adaptation.
