For the Steak Bites:

  • 1.5 lbs sirloin steak, cut into 1-inch cubes
  • 1 tbsp olive oil
  • 1 tsp salt
  • ½ tsp black pepper
  • ½ tsp garlic powder
  • ½ tsp smoked paprika

For the Potatoes:

  • 1.5 lbs Yukon Gold potatoes, diced into small chunks
  • 1 tbsp olive oil
  • ½ tsp salt
  • ½ tsp black pepper
  • ½ tsp paprika
  • ½ tsp onion powder

For the Garlic Butter:

  • 4 tbsp unsalted butter
  • 4 cloves garlic, minced
  • 1 tbsp fresh parsley, chopped
  • 1 tsp fresh thyme (optional)
  • ½ tsp red pepper flakes (optional for heat)

Instructions

1- Prepare the Steak: In a bowl, toss steak cubes with olive oil, salt, black pepper, garlic powder, and smoked paprika. Set aside to marinate while cooking the potatoes.

2- Cook the Potatoes:

Heat 1 tbsp olive oil in a large skillet over medium-high heat.

Add potatoes in a single layer and cook undisturbed for 4-5 minutes until golden brown.

Stir and continue cooking for another 5-6 minutes until crispy. Remove from skillet and set aside.

3- Sear the Steak Bites:

In the same skillet, heat another 1 tbsp olive oil over high heat.

Add the steak in a single layer and sear for 1-2 minutes per side until browned. Avoid overcrowding.

Once seared, reduce heat to medium, add the butter and garlic, and stir well to coat the steak.

4- Combine & Finish:

Return the crispy potatoes to the pan and toss everything together.

Add fresh parsley, thyme, and red pepper flakes (if using). Stir for 1-2 minutes to let the flavors meld.

Remove from heat and serve immediately.

  • For extra crispiness, soak potatoes in cold water for 10 minutes before cooking, then pat dry.
  • Use ribeye or tenderloin for a juicier steak alternative.
