Ingredients
2 cups all-purpose flour
1½ teaspoons baking powder
1 teaspoon ground cinnamon
¼ teaspoon ground nutmeg
¼ teaspoon salt
1½ cups milk
¼ cup granulated sugar
2 large eggs
1 teaspoon vanilla extract
Vegetable oil (for frying)
Powdered sugar (for dusting)
Instructions
-
In a large bowl, beat the eggs until light and foamy.
-
Add the milk and vanilla extract; whisk until smooth.
-
In a separate bowl, whisk together flour, baking powder, cinnamon, nutmeg, salt, and sugar.
-
Gradually stir the wet ingredients into the dry ingredients, mixing until you get a thick, smooth batter.
-
In a deep skillet or heavy-bottomed pot, heat about ¾ inch of vegetable oil to 375°F.
-
Use a small cookie scoop or spoon to carefully drop dollops of batter into the hot oil, frying 4–5 at a time.
-
Cook for 1–2 minutes per side, or until golden brown.
-
Remove with a slotted spoon and drain on a paper towel-lined plate.
-
While warm, dust generously with powdered sugar.
Notes
Maintain the oil temperature at 375°F for the best texture.
Avoid overcrowding the pan to ensure even frying.
For extra flavor, mix cinnamon into your powdered sugar.
Top with chocolate or caramel sauce, fresh fruit, whipped cream, or even serve with a scoop of ice cream!
