These French Toast Muffins are a cozy, bite-sized twist on the breakfast classic. Soft, cinnamon-sweet, and perfectly golden, they make for a quick and delicious breakfast or brunch treat. Ideal for using up day-old bread, they’re easy to make and even easier to love!
Ingredients
4 large eggs
1 cup milk (whole milk is best, but any works)
1 teaspoon vanilla extract
1 teaspoon ground cinnamon
1 cup granulated sugar
4 cups bread cubes (white or wheat, day-old is perfect!)
¼ cup melted butter
Optional: maple syrup or powdered sugar for serving
Instructions

Preheat your oven to 350°F (175°C) and lightly grease a 12-cup muffin tin.

In a large mixing bowl, whisk together the eggs, milk, vanilla extract, cinnamon, and sugar until well combined.

Add the bread cubes and gently stir until each piece is fully coated. Let sit for 5–10 minutes to soak.

Spoon the mixture into the prepared muffin cups, filling each about ¾ of the way full.

Drizzle melted butter over the top of each muffin.

Bake for 20–25 minutes, or until the muffins are puffed up and golden brown.

Allow to cool slightly before removing from the tin. Serve warm with maple syrup or a sprinkle of powdered sugar.
Notes
Honey or maple syrup can be used in place of sugar—use about ¾ cup.
These muffins are great for meal prep! Reheat in the microwave or toaster oven for a quick breakfast.
Try adding a handful of raisins or chopped nuts for extra texture.
