Description

These French Toast Muffins are a cozy, bite-sized twist on the breakfast classic. Soft, cinnamon-sweet, and perfectly golden, they make for a quick and delicious breakfast or brunch treat. Ideal for using up day-old bread, they’re easy to make and even easier to love!


Ingredients

4 large eggs

1 cup milk (whole milk is best, but any works)

1 teaspoon vanilla extract

1 teaspoon ground cinnamon

1 cup granulated sugar

4 cups bread cubes (white or wheat, day-old is perfect!)

¼ cup melted butter

Optional: maple syrup or powdered sugar for serving


Instructions

  • Preheat your oven to 350°F (175°C) and lightly grease a 12-cup muffin tin.

  • In a large mixing bowl, whisk together the eggs, milk, vanilla extract, cinnamon, and sugar until well combined.

  • Add the bread cubes and gently stir until each piece is fully coated. Let sit for 5–10 minutes to soak.

  • Spoon the mixture into the prepared muffin cups, filling each about ¾ of the way full.

  • Drizzle melted butter over the top of each muffin.

  • Bake for 20–25 minutes, or until the muffins are puffed up and golden brown.

  • Allow to cool slightly before removing from the tin. Serve warm with maple syrup or a sprinkle of powdered sugar.

Notes

Honey or maple syrup can be used in place of sugar—use about ¾ cup.

These muffins are great for meal prep! Reheat in the microwave or toaster oven for a quick breakfast.

Try adding a handful of raisins or chopped nuts for extra texture.
