Ingredients
For the Pie Crust:
2 ½ cups all-purpose flour (plus extra for dusting)
1 cup (2 sticks) chilled unsalted butter, cubed
Pinch of salt
4–6 tablespoons ice water
For the Apple Filling:
6–7 medium apples (Granny Smith or Braeburn), peeled, cored, and thinly sliced
½ cup granulated sugar (adjust to taste)
1 tsp ground cinnamon
1 tsp vanilla extract
1 tbsp lemon juice
2 tbsp cornstarch (or flour)
For Assembly:
1 egg, beaten (for egg wash)
2 tbsp coarse sugar (for sprinkling on crust)
Instructions
-
Make the Dough: In a large bowl, whisk together flour and a pinch of salt. Cut in cold butter with a pastry cutter until mixture resembles coarse crumbs. Add ice water, 1 tablespoon at a time, mixing gently until dough forms. Divide into disks, wrap in plastic, and chill for at least 1 hour.
-
Prepare the Filling: In a bowl, toss sliced apples with sugar, cinnamon, vanilla, lemon juice, and cornstarch. Let sit for 15 minutes to release juices.
-
Roll the Crust: On a lightly floured surface, roll dough into a circle about ⅛ inch thick. Transfer to a pie dish, gently pressing into the bottom and sides. Trim excess dough, leaving a slight overhang. Chill while preparing filling.
-
Assemble: Fill crust with apples, layering evenly and pouring any remaining juices on top. Add a top crust or decorative shapes, if desired. Brush with beaten egg and sprinkle coarse sugar.
-
Bake: Preheat oven to 375°F (190°C). Place pie on a baking sheet and bake for 45–60 minutes, until crust is golden and filling is bubbling. Cover edges with foil if browning too quickly. Cool before slicing.
Notes
For a lattice or streusel topping, adjust the crust quantity or add a crumb mix of butter, flour, and sugar.
Add a dash of nutmeg or cloves for a deeper spice profile.
Pie can be made a day ahead and reheated before serving.
Serve with vanilla ice cream, whipped cream, or a drizzle of caramel sauce for extra indulgence.
