Instructions

  • Make the Dough: In a large bowl, whisk together flour and a pinch of salt. Cut in cold butter with a pastry cutter until mixture resembles coarse crumbs. Add ice water, 1 tablespoon at a time, mixing gently until dough forms. Divide into disks, wrap in plastic, and chill for at least 1 hour.

  • Prepare the Filling: In a bowl, toss sliced apples with sugar, cinnamon, vanilla, lemon juice, and cornstarch. Let sit for 15 minutes to release juices.

  • Roll the Crust: On a lightly floured surface, roll dough into a circle about ⅛ inch thick. Transfer to a pie dish, gently pressing into the bottom and sides. Trim excess dough, leaving a slight overhang. Chill while preparing filling.

  • Assemble: Fill crust with apples, layering evenly and pouring any remaining juices on top. Add a top crust or decorative shapes, if desired. Brush with beaten egg and sprinkle coarse sugar.
