Description

This Cod with Garlic and Lemon is a light, fresh, and satisfying dish that’s quick to prepare and bursting with flavor. The delicate cod fillets are pan-seared in fragrant garlic-infused olive oil, then brightened with zesty lemon juice and aromatic thyme.


Ingredients

2 cod fillets (about 6 oz each)

3 cloves garlic, minced

Juice of 1 lemon

2 tablespoons olive oil

1 teaspoon fresh thyme leaves (or 1/2 tsp dried thyme)

Salt, to taste

Black pepper, to taste


Instructions

  • Pat the cod fillets dry and season both sides with salt and black pepper.

  • In a large skillet, heat olive oil over medium heat.

  • Add minced garlic and sauté for 30 seconds to 1 minute, or until fragrant.

  • Gently place cod fillets in the skillet and cook for about 6 minutes per side, or until the fish flakes easily with a fork.

  • While cooking, drizzle with fresh lemon juice and sprinkle with thyme.

  • Remove from heat and serve immediately with your favorite sides like mashed potatoes and steamed green beans.

Notes

For a buttery twist, add a pat of butter to the skillet before adding the cod.

You can substitute thyme with parsley or dill for a different herbaceous note.
