Ingredients
4 salmon fillets
2 tablespoons pure maple syrup
Salt and pepper, to taste
A handful of fresh sage leaves
1 cup Brussels sprouts, halved
1/2 cup fresh cranberries
1 tablespoon olive oil
Instructions
-
Preheat oven to 400°F (205°C).
-
Season salmon fillets with salt and pepper, then brush each one generously with maple syrup.
-
In a bowl, toss halved Brussels sprouts and cranberries with olive oil. Spread evenly on a baking sheet.
-
Place the salmon fillets on top of the vegetables and scatter sage leaves around.
-
Roast for 12–15 minutes, or until the salmon flakes easily with a fork and the vegetables are tender.
-
Serve warm, spooning vegetables and sage alongside each fillet for a hearty autumn meal.
Notes
Swap Brussels sprouts with butternut squash or sweet potatoes for variety.
Add a pinch of chili flakes to the maple glaze for a sweet-spicy kick.
For extra flavor, marinate the salmon in the maple syrup for 15 minutes before roasting.
