Mornings at camp have their own kind of magic—birds chirping, coffee brewing, and kids zipping in and out of tents like squirrels on espresso. To keep up, you need fuel. This Campfire Breakfast Skillet combines all the breakfast staples into one simple skillet. Minimal dishes, maximum flavor!
Ingredients
6 large eggs
1 cup diced potatoes (pre-cooked or frozen hash browns work best)
1 cup cooked sausage or bacon, chopped
1 bell pepper, diced
1 small onion, diced
1 cup shredded cheese (cheddar or a blend)
1 tablespoon olive oil or butter
Salt and pepper to taste
Instructions
- Heat your cast-iron skillet over medium heat on a campfire or camping stove. Add olive oil or butter to coat the bottom.
- Toss in the potatoes. Cook them until they’re golden and a little crispy (5-7 minutes), giving them an occasional stir.
- Add the diced bell pepper and onion. Cook for another 3-5 minutes until they soften and smell amazing.
- Stir in the sausage or bacon, mixing everything together.
- Push the mixture to one side of the pan. Crack the eggs into the empty space and scramble them until fully cooked.
- Fold the eggs into the potato mixture.
- Sprinkle cheese on top and let it melt.
- Serve straight from the skillet. Bonus points if you eat it by the fire with a hot mug of coffee!
