Ingredients
2 eggs
1/4 cup cooked, shredded chicken
1/4 cup diced bell peppers (any color)
2 tablespoons chopped onions
2 tablespoons grated cheese (cheddar or your choice)
1 tablespoon milk
1 tablespoon butter or oil
Salt and pepper to taste
Instructions
Prepare Ingredients: Crack the eggs into a bowl and whisk with milk, salt, and pepper.
Cook Vegetables: Heat butter or oil in a skillet over medium heat. Sauté onions and bell peppers until softened.
Add Chicken: Stir in shredded chicken and cook until heated through. Remove the mixture from the pan and set aside.
Cook the Eggs: Pour the whisked eggs into the skillet, spreading evenly.
Add Filling: Once the eggs begin to set, place the chicken and vegetable mixture on one half of the omelet. Sprinkle with cheese.
Fold and Serve: Gently fold the other half of the omelet over the filling. Cook for another minute, then slide onto a plate. Serve warm.
