Ingredients
- 1 pound chicken tenders
- 1 pound large shrimp (cleaned and deveined)
- 2 tablespoons avocado oil
- ¾ cup coconut milk
- 2 garlic cloves (minced)
- ½ cup Pecorino Romano cheese
- 1 teaspoon smoked paprika
- ½ teaspoon crushed red pepper
- 1 tablespoon fresh lime juice
- 1 teaspoon fresh thyme (chopped)
- Salt and black pepper (to taste)
Instructions
- Sauté the Chicken:
Heat 1 tablespoon of avocado oil in a skillet over medium-high heat. Season chicken tenders with salt, black pepper, and half the smoked paprika. Cook for 4–5 minutes on each side until golden and fully cooked. Remove and set aside. -
Cook the Shrimp:
Add another tablespoon of avocado oil to the same skillet. Season shrimp with the remaining smoked paprika, salt, and black pepper. Cook for 2–3 minutes per side until pink and firm. Remove and set aside -
Prepare the Creamy Sauce:
Lower heat to medium and sauté minced garlic for 30 seconds until fragrant. Stir in the coconut milk, grated Pecorino Romano, thyme, and crushed red pepper. Let the sauce simmer for 4–5 minutes until it begins to thicken. -
Combine Chicken and Shrimp:
Return the cooked chicken and shrimp to the skillet. Stir to coat them in the creamy sauce. Simmer for 2–3 minutes to allow the flavors to meld. -
Add a Zesty Finish:
Squeeze fresh lime juice over the dish and stir. Adjust salt and pepper to taste. -
Serve:
Serve hot with your choice of sides like rice, mashed potatoes, or crusty bread. Garnish with fresh thyme or extra Pecorino Romano, if desired.
