Description

This Tuna and Tomato Penne is a quick and hearty canned fish pasta recipe that’s perfect for busy weeknights. With tender penne pasta, savory tuna, juicy diced tomatoes, and briny olives, it’s a flavorful dish that comes together in under 30 minutes. Finished with fresh parsley and a sprinkle of Parmesan, this pantry-friendly meal is as comforting as it is convenient.

Ingredients

Scale

12 oz penne pasta

2 cans tuna in olive oil, drained

1 can (14.5 oz) diced tomatoes

3 cloves garlic, minced

1/4 cup black olives, sliced

1 tsp dried oregano

2 tbsp extra virgin olive oil

Fresh parsley, chopped (for garnish)

Salt and pepper, to taste

Optional: Grated Parmesan cheese, for serving

Instructions

  • Cook the penne pasta according to package instructions until al dente. Drain and set aside.

  • In a large skillet, heat olive oil over medium heat. Add minced garlic and sauté until fragrant, about 1 minute.

  • Add the diced tomatoes (with their juices), oregano, and a pinch of salt and pepper. Simmer for 5–7 minutes, stirring occasionally.

  • Stir in the drained tuna and sliced olives. Cook for another 2–3 minutes until heated through.

  • Add the cooked pasta to the skillet and toss to combine, allowing the sauce to coat the pasta evenly.

  • Taste and adjust seasoning if needed.

  • Serve hot, garnished with chopped parsley and optional grated Parmesan cheese.

Notes

Use whole wheat or gluten-free pasta for dietary preferences.

Add red pepper flakes for a bit of heat.

For a richer sauce, stir in a tablespoon of butter or a splash of cream.

Pairs well with a fresh salad or crusty garlic bread.
