Description

These homemade chicken breakfast sausage links are packed with savory herbs and spices, made from scratch with wholesome ingredients. Perfect for a hearty breakfast or meal prepping for the week, these sausages are juicy, flavorful, and easy to make!

2 pounds ground chicken (or freshly ground chicken thighs)

1 tablespoon olive oil (optional, for juicier texture)

2 teaspoons kosher salt

1 teaspoon ground black pepper

1 tablespoon fresh sage, finely chopped (or 1 tsp dried)

1 teaspoon thyme (fresh or dried)

1 teaspoon fennel seeds (lightly crushed)

1 teaspoon paprika

½ teaspoon crushed red pepper flakes (optional for heat)

1 teaspoon brown sugar (optional for a touch of sweetness)

¼ cup ice water

Natural or synthetic sausage casings (optional, for links)


Instructions

  • In a large bowl, combine ground chicken, olive oil, salt, pepper, sage, thyme, fennel seeds, paprika, red pepper flakes, and brown sugar.

  • Slowly add the ice water while mixing the meat with your hands. Mix gently but thoroughly until the spices are evenly distributed and the mixture is slightly sticky.

  • (Optional) If using casings, soak them according to package instructions.

  • Fit your sausage stuffer with the appropriate nozzle and slide the casing onto it. Carefully feed the chicken mixture into the stuffer and fill the casing, forming one long coil.

  • Twist the filled sausage into 4-inch links by pinching and rotating in opposite directions between each link.

  • Alternatively, form small patties or hand-roll link shapes without casings.

  • Cook the sausages over medium heat in a skillet with a little oil, about 4–5 minutes per side, until golden brown and fully cooked through (internal temp of 165°F).

  • Serve hot or cool completely and refrigerate or freeze for later use.

Notes

For extra moisture, use ground chicken thigh rather than breast.

Freeze uncooked sausage links on a baking sheet, then transfer to a freezer bag.

Test seasoning by cooking a small patty before stuffing. Adjust salt and spice to your liking.
