This bowtie pasta salad is a fresh, flavorful dish perfect for potlucks, picnics, or quick weeknight dinners. Packed with vibrant vegetables, a tangy vinaigrette, and optional protein, it’s easy to customize and even easier to love.
Ingredients
12 oz bowtie (farfalle) pasta
1 cup cherry tomatoes, halved
1 cup cucumber, diced
1 cup red bell pepper, diced
1/2 cup red onion, finely chopped
2 cups baby spinach (optional)
1 1/2 cups grilled chicken or shrimp, cooked and chopped (optional)
1/4 cup olive oil
2 tbsp lemon juice
1 garlic clove, minced
1 tsp dried Italian herbs or fresh basil
Salt and pepper, to taste
Instructions

Cook the bowtie pasta according to package instructions until al dente.

Drain and rinse the pasta under cold water to stop the cooking process. Toss with a little olive oil to prevent sticking.

Chop the vegetables and any optional protein.

In a small bowl, whisk together olive oil, lemon juice, garlic, herbs, salt, and pepper to make the dressing.

In a large mixing bowl, combine the pasta, vegetables, and protein (if using).

Pour the dressing over the salad and toss until everything is evenly coated.

Chill for 15–30 minutes before serving for best flavor.
Notes
