Description

This bowtie pasta salad is a fresh, flavorful dish perfect for potlucks, picnics, or quick weeknight dinners. Packed with vibrant vegetables, a tangy vinaigrette, and optional protein, it’s easy to customize and even easier to love.


Ingredients

12 oz bowtie (farfalle) pasta

1 cup cherry tomatoes, halved

1 cup cucumber, diced

1 cup red bell pepper, diced

1/2 cup red onion, finely chopped

2 cups baby spinach (optional)

1 1/2 cups grilled chicken or shrimp, cooked and chopped (optional)

1/4 cup olive oil

2 tbsp lemon juice

1 garlic clove, minced

1 tsp dried Italian herbs or fresh basil

Salt and pepper, to taste


Instructions

  • Cook the bowtie pasta according to package instructions until al dente.

  • Drain and rinse the pasta under cold water to stop the cooking process. Toss with a little olive oil to prevent sticking.

  • Chop the vegetables and any optional protein.

  • In a small bowl, whisk together olive oil, lemon juice, garlic, herbs, salt, and pepper to make the dressing.

  • In a large mixing bowl, combine the pasta, vegetables, and protein (if using).

  • Pour the dressing over the salad and toss until everything is evenly coated.

  • Chill for 15–30 minutes before serving for best flavor.

Notes

Substitute grilled chicken with tofu or chickpeas for a vegetarian option.

Use balsamic vinaigrette or pesto for a twist in flavor.
