1 lb boneless, skinless chicken thighs or breasts

1 tbsp olive oil

For the Blackening Seasoning:

1 tsp smoked paprika (or sweet paprika)

1 tsp garlic powder

1 tsp dried oregano

½ tsp cayenne pepper (adjust to taste)

½ tsp dried thyme

½ tsp freshly ground black pepper

1 tsp salt

For the Sandwich:

4 buns (brioche, whole wheat, or hamburger buns)

4 tbsp mayo (or plain Greek yogurt with a splash of lemon juice)

1 cup shredded lettuce

Optional add-ons: pickles, red onion, spicy mayo, cheese
