Description

This Sticky Beef & Noodles recipe is a quick and satisfying one-pan dinner perfect for busy weeknights. Tender strips of beef are stir-fried with crisp veggies and tossed in a sweet and savory sauce that clings beautifully to soft noodles. Minimal cleanup, maximum flavor!

For the stir fry:

1 tbsp vegetable oil

400g beef (stir-fry strips, flank, or rump – sliced thinly against the grain)

1 small head of broccoli, cut into florets

150g green beans or sugar snap peas

250g dried egg noodles (or straight-to-wok noodles)

For the sticky sauce:

4 tbsp dark soy sauce (reduced sodium if preferred)

4 tbsp oyster sauce

2 tbsp honey

1 tbsp tomato ketchup

3 cloves garlic, crushed

1 tsp grated ginger (fresh or jarred)

To garnish (optional):

3 spring onions, thinly sliced

Sesame seeds or chili flakes


Instructions

  • In a small bowl, mix together all the sauce ingredients and set aside.

  • Place the dried noodles in a bowl, cover with boiling water, and top with a plate. Soak for about 5 minutes, stirring halfway through.

  • Heat the vegetable oil in a large nonstick frying pan or wok over high heat. Add the beef strips and cook for 4–5 minutes, until browned and just cooked through.

  • Add the broccoli and green beans (or sugar snap peas) to the pan. Stir-fry for another 4–5 minutes, until the vegetables are tender but still vibrant.

  • Drain the noodles and add them to the pan along with the sauce. Stir everything together until well coated and heated through, about 2 minutes.

  • Serve hot, garnished with spring onions and optional sesame seeds or chili flakes.

Notes

For a shortcut, use pre-cooked straight-to-wok noodles.

Swap green beans for bell peppers or carrots for variety.

Add a splash of chili oil for a spicier version.
