This 4 Ingredient Potato Soup is the ultimate comfort food! Creamy, rich, and incredibly easy to make with just four basic ingredients. Perfect for a cozy meal in under 40 minutes.
Ingredients
4 medium-sized starchy potatoes (Russets or Yukon Gold)
1 medium onion, finely chopped
2 tablespoons unsalted butter
2 cups whole milk (or cream)
Instructions
1️⃣ Prep the Ingredients – Peel & dice potatoes. Chop onion finely.
2️⃣ Sauté the Onions – Melt butter in a large pot over medium heat. Add onions & cook until translucent (3-5 mins).
3️⃣ Cook the Potatoes – Add diced potatoes & enough water to cover them. Bring to a boil, then simmer for 15-20 mins until fork-tender.
4️⃣ Blend & Finish – Mash the potatoes in the pot or use an immersion blender. Stir in milk & season with salt & pepper to taste.
5️⃣ Serve & Enjoy – Heat gently, garnish with herbs if desired, and enjoy!
